Financial literacy

At the age and skill level I work with learning to identify the coins and what they are worth. Along with we work on countingy fives and tens. The issue that I have is the student I work with is below grade level and enough so that he is considered severe and profound.

I understand exactly what you mean. There is often a wide range of ability in the classroom; therefore, differentiation is a must. While some children may "play store" by purchasing tagged items with money, others may just be able to understand that a coin is given in exchange for an item, without regard to amount.
