I teach 5th grade math and currently our school district uses Outlook for the teacher emails and Gmail for students, we are kind of in a transition stage of going all Gmail.
I really enjoyed learning about the chat feature, I believe this could be useful for students when working on projects.
I could also see using the calendar feature with parents to keep them and the students up to date with the events going on in the school.
