Having students utilize gmail to turn in assignments or projects electronically meets them where they technologically. In many ways educators are trying to keep up with students and integrating gmail into the classroom is utilizing a tool the students are already using.
Saving on paper is wonderful, as are the opportunities afforded to students to engage with other learners around the world through pen pal programs.
